A minap először készítettem khachapuri-t. Teljesen odáig voltunk érte, na nem véletlen. Ki ne szeretné a házi kovászos tésztában sült 4! sajtos lágytojásos finomságot aka egy eredetileg Georgiából származó nagyon népszerű kenyér különlegességet?

Régiónként eltérő lehet a készítése van ahol adnak hozzá főtt burgonyát, vagy főtt tojást is. Van ahol kerekre készítik és van ahol csónakot formáznak belőle és ezt töltik meg sajttal. Én az utóbbit választottam.

Mivel nem tudtam beszerezni a tradicionálisan használt sajtot ( Solguni ) ezért úgy döntöttem 4 különbözőt használok. Fetát a sósságáért, kecske sajtot az extra ízért, scamorzát a füstösségért és cheddart az olvadékonysága miatt. Természetesen a sajt választás rád van bízva, otthon tuti, hogy trappistát is használnék hozzá!!

Elkészítése egyszerű, főleg ha járatos vagy kovászolásban mert a többi már gyerekjáték.

Khachapuri négy sajttal


Ebből a receptből 4 khachapuri lesz. Én 230 C-ra előmelegített sütőben sütöttem gránit kövön.

A tésztához:

  • 400g kenyér liszt ( Shipton mill )
  • 100g aktív kovász
  • 200g házi kefír
  • 70g langyos víz
  • 1 ek olaj
  • 9 g só

A töltelékhez:

  • 100g feta
  • 100g scamorza
  • 100g kecske sajt
  • 100g mild cheddar

Szükséged lesz még 4 friss tojásra is.

  1. Elkészítem a tésztát. Az összes alapanyagból egy szép sima tésztát készítek és letakarva kb duplájára kelesztem. Mivel nálam aznap elég meleg volt ezért meglehetősen gyorsan ment.
  2. Kb 3,5-4 óra után 4 egyenlő részre osztom és mindegyiket gömbölyítem. Kb fél órát pihentetem ezalatt az idő alatt lereszelem és összekeverem a sajtokat. Előkészítek egy vágódeszkát, és rávágok egy kb akkora darab sütő papírt mint a gránit kövem.
  3. Kilapítok egy tészta golyót kb 20-25cm átmérőjűre, mintha pizzát készítenék. A sajt negyedét ráhalmozom a tésztára úgy, hogy a széleken kihagyok 3-4 cm-t. Elkezdem felgöngyölni az egyik oldalát majd a másikat is úgy, hogy a szélek a középén találkozzanak ( lásd képeket fent ). Enyhén megcsavarom a tetején és az alján így egy csónak formát kapok sok sok finom sajttal megtöltve. Egyszerre két khachapurit sütök a 230C-ra előmelegített sütőben
  4. Kb 15-18 perc után, vagy amikor már a tészta teljesen átsült és a sajt szép aranybarna lett ráütök egy egy egész tojást a csónakokra. Vissza teszem még kb 2 percre mert én lágyan szeretem a tojást ( süssd addig amíg kedvedre sül a tojás ). Így járok el a maradék kettővel is.

Khachapuri with 4 cheese


I made khachapuri for the first time the other day and it was a great success! Delicious sourdough base made with some home made kefir, 4 different cheese cooked until it turns golden brown, gooey with a runny egg in the middle… don’t tell me that you don’t wanna eat this…

This delicious “boat” originated from Georgia. There are many varieties across the country, depending on the regions. Some are made with potatoes or hard boiled egg, some shaped round or boat shaped. Traditionally a cheese called Solguni is used, but I couldn’t get any so I made my 4 cheese variation. I used feta for saltiness, scamorza for smokiness, mild cheddar for gooeyness and aged goat cheese for the extra flavour.

My dough base is sourdough as I don’t bake with commercial yeast any more. The sourdough can do everything the yeast can, and even better!! In my dough I used my home made kefir as it makes the dough lighter, softer and even more delicious!

This recipe makes 4 khachapuri. I baked them in a 230C oven on my granite baking stone, but if you don’t have one, you can bake them on a tray too.

Recipe for the dough:

  • 400g bread flour ( Shipton mill )
  • 100g active sourdough starter ( 80% hydration )
  • 200g home made kefir
  • 70g luke warm water
  • 1 tbsp olive oil
  • 9g sea salt
  1. First make the dough. Mix all the ingredients together in a bowl, knead it for few minutes and then let it rest for 3-4 hours or until it is nearly doubled in size. Divide the dough into four equal pieces and roll them into balls.
  2. Rest them again for a good half hour, meanwhile grate all the cheese, and preheat the oven to 230C. Use a chopping board with a piece of parchment paper on top of it. This way you can easily slide in 2 khachapuri with the paper onto the stone.
  3. Flatten out a ball to 20-25 cm diameter, like you would do for a pizza base. Put 1/4 of the cheese on the middle and leave a 3-4 cm empty space from the edges. Start folding the two sides towards the middle and twist the ends on top and on the bottom. This way you will form a boat, filled with delicious grated cheese.
  4. Slide the paper onto the hot stone and bake them for about 15-18 minutes or until the dough is fully baked and the cheese melted. Crack one egg on each of the boats and bake them for a further 2 minutes or to your liking. Repeat for the rest of the remaining balls too.
